Since then, we have upgraded to include two large scale mixers, an autoclave, built a proper lab complete with a flow hood and genetics library, built an indoor fruiting chamber with a future chamber started (512 cubic feet each), and are a weekly staple at our local Farmers Market.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-default-color has-alpha-channel-opacity has-default-background-color has-background\"\/>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Working from the Land<\/h2>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-default-color has-alpha-channel-opacity has-default-background-color has-background\" style=\"margin-top:var(--wp--preset--spacing--40);margin-bottom:var(--wp--preset--spacing--40)\"\/>\n\n\n\n<p>Combining hardwood shavings from lumber harvested on our property and pristine mountain water, our mushrooms showcase our amazing environment and our farm\u2019s efforts. While most of our production is [currently] indoors, we are working toward major outdoor expansion by inoculating logs with our best performing mushrooms, namely Shiitake, Grey Oyster and Blue Oyster.<\/p>\n\n\n\n<p>In addition to gourmets, we are working toward medicinal mushroom production &#8211; leading the way is the Turkey Tail mushroom which has pronounced [positive] effects on the immune system and is shown to have <a href=\"https:\/\/www.google.com\/search?q=turkey+tail+cancer+study\">anti-cancer properties<\/a> as well.<\/p>\n\n\n\n<p>Supplementing our growing efforts, we regularly explore our land foraging mushrooms to bring to market. In North Carolina, there are (16) wild foraged mushrooms that may be sold. So far we&#8217;ve gotten nine of them on our land.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-default-color has-alpha-channel-opacity has-default-background-color has-background\" style=\"margin-top:var(--wp--preset--spacing--40);margin-bottom:var(--wp--preset--spacing--40)\"\/>\n\n\n\n<h2 class=\"wp-block-heading\">Work in Progress<\/h2>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-default-color has-alpha-channel-opacity has-default-background-color has-background is-style-dots\" style=\"margin-top:var(--wp--preset--spacing--40);margin-bottom:var(--wp--preset--spacing--40)\"\/>\n\n\n\n<p>Our work, much like this site, are a work in progress.
