Most commonly folks ask us how to cook our fine mushrooms, but I wanted to take a second and tell you how we farm mushrooms for the marketplace.
A few years back we harvested and milled quite a few mature trees on the property, oaks and poplars to be precise. Now these slabs are dry enough for woodworking projects and are being cut and planed, making quite a mess. Fortunately, we have a cyclone dust collector in the shop which allows us to recoup said material. With various pieces of [large] equipment, we hydrate, supplement and sterilize the hardwood shavings to create the perfect fungi food! (We really think this is the secret to our success, and why our mushrooms grow to be giants.)



But how do we grow mushrooms?
Let’s skip ahead just a little – the sawdust bags, known as substrate, get inoculated with homemade myceliated grain. Once the bags are ready, they get moved into the fruiting chamber. You’ll see in the pictures below more or less how the process moves along.



So that’s it?
The short answer is yes. The long answer is no. In the end, just know we handle every step along the way with care and commitment – bringing to market only the finest gourmet mushrooms for you and your family (or customers) to enjoy. Now the question is: how are you going to cook them?
